Making your own almond milk

We are a dairy free family. So as an alternative to cow's milk we drink almond milk. We go through about 1 900ml tetra pack per day. Lately the waste from drinking this much almond milk has been really bothering me. We throw out 7 per week!!! That is a lot of garbage. Even if you recycle it still takes up precious resources. If you think about the saying "reduce, reuse, recycle" you will see that reduce is first for a reason. So yesterday I started searching for almond milk recipes and found that is really is quite easy. So this morning we are drinking our very own homemade almond milk and it is delicious!!! Not only is it delicious, it is way cheaper!! If you can find your almonds on sale (at the bulk barn this week for $3.79 per pound!!!), then it costs less then $1.50 per litre. I pay $2.00 per 900ml tetra pack. Here is the recipe:

Step 1. Measure out 1 cup of raw almonds and soak them in filtered water overnight.

Step 2. drain the liquid and rinse well. Thrown them in your blender with about 5 or 6 cups of filtered water, 1 or 2 dates and a pinch of sea salt. Blend well.

Step 3. Poor the liquid into a mesh strainer that is lined with either a nut milk bag or a few layers of cheese cloth. Even a tea towel will work. (make sure the mesh strainer is over top of a big bowl) Let it strain for at least an hour and then when you think it's done, gather up your pulp, fold the bag over it and squeeze it to get every drop of milk outta there.

You will be left with this pulp. You can use it in smoothies or dips, you can even use it as an exfoliator for your skin in the shower.

And what you are left with is about 1 litre of yummy , fresh almond milk that you can keep in the fridge for 2 or 3 days.

That is so awesome, Sebrina! I'm assuming the date adds some sweetness? I'll have to try this. But first, need to find where I can buy almonds in bulk. Thank you so much!

Yes the dates are for sweetness. You can leave them out if you like. But I like the flavour they give. If you wanted to make vanilla almond milk just add some pure vanilla extract. yum!!! Or how about chocolate.. Just add some cocoa powder. Mmmmm I feel a chocolate banana smoothie coming on ;)

The filtered water, are you talking bottled water? We reuse/refill the big 18L jugs (our town water does not taste good, but you can cook fine with it), what do you recommend?

Yes I use bottled water. Reverse Osmosis actually. Anything but tap water would be fine :)
